#1526 - Yam Bake

2 lbs. raw yams
1 tsp. salt
1 - 13.25oz. can pineapple tidbits (drained)
1/4 cup orange marmalade
1 cup mini marshmallows

Wash, peel and cut the yams into quarters. In a pot over medium heat add yam quarters covered with water--add salt and cook until tender--drain. Grease a glass pie plate. Arrange the yams in the greased plate. Spread the drained pineapple tidbits on top of the yams. Dot the marmalade on top of the pineapple tidbits. Place pie plate on a cookie sheet (to catch drips) and bake at 350 degrees for 30 minutes--remove from oven, sprinkle the marshmallows on top, and return to oven until marshmallows are browned and starting to melt.

#380 - Baked Sweet Potato Casserole

4 medium yams or sweet potatoes (or 1 small can of sweet potatoes)
1/4 cup melted Parkay margarine
1 cup white sugar
1 tsp. salt
1 - 1lb. can Dole crushed pineapple and its juice

Wash and peel sweet potatoes, slice them in half, then place them in a saucepan--cover them with water and add 1 tsp. salt--bring to a boil then cook until tender. Drain potatoes and discard water. In a glass 8 x 8 baking dish, pour melted Parkay evenly. In a small bowl, add the white sugar--roll each sweet potato in the white sugar to coat. Place each coated potato in the baking dish. When all potatoes are in the dish, cover them evenly with the crushed pineapple and its juice. Bake at 350 degrees for 20-25 minutes until hot.

#274 - Sweet Potato Crunch

4 large sweet potatoes OR yams
1 cup white sugar
2 eggs
1 1/2 cups Carnation milk
1 tsp. salt
1 cup Domino's dark brown sugar
1/2 cup flour
1 cup chopped pecans
1/2 stick butter

Peel potatoes and cook covered in water with 1 tsp. salt--cook until inserted fork goes into potatoes easily. Drain off the water and let cool completely. In a large bowl using a spoon or wire whisk, whip together the potatoes, white sugar, eggs, milk. Pour mixture into a greased 9 x 13 x 2 cake pan. In a small bowl using a spoon, mix brown sugar, flour, and pecans. Sprinkle the pecan mixture over the top of the sweet potato mixture. Melt butter and pour over top of pecan mixture. Bake at 350 degrees for 45 minutes.

#253 - Baked Ham

1 - 16oz. canned ham
1 - 3oz. package orange Jell-O
1/3 cup Domino's dark brown sugar (packed)
2 tsp. dry mustard
1 cup boiling water
1 - 17oz. can canned sweet potatoes or yams

In a bowl, dissolve Jell-O, brown sugar, dry mustard in the boiling water. Place the opened canned ham in a shallow pan and arrange the sweet potatoes or yams along the sides of the ham. Pour the Jell-O mixture over the ham and potatoes. Bake at 350 degrees for 1 hour. Baste using the juice in the bottom of the pan every 15 minutes while it's cooking.

#142 - Sweet Potato Pie

4 large yams
3 eggs
1/3 cup white sugar
1 tsp. lemon juice
3/4 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/4 tsp. salt
1 1/2 cups light cream
4 TBSP melted butter
1 unbaked 9" pie shell (if you want to make the pie shell from scratch, check out our recipe #33)

Bake the yams at 400 degrees on a cookie sheet or in a cake pan until tender (test with a fork). Remove from oven, peel them, and mash them with a potato masher. Beat 3 eggs and add to the mashed yams. Add the sugar, lemon juice, cinnamon, allspice, nutmeg, and salt. Stir everything with a spoon until well mixed. Add the light cream and stir. Add the melted butter and stir with a spoon. Spray the pie dish with Pam, insert the unbaked pie crust, then spray the inside of the pie crust with Pam also. Scoop mixture into the unbaked pie shell and bake 400 degrees for 50 minutes.

#124 - Candied Sweet Potatoes

3 large whole yams
1/2 - 3/4 cup dark brown Domino's sugar
canola oil
salt

Peel yams and cut each yam into quarters. Put yams in a saucepan. Cover yams with water and add a pinch of salt. Turn heat on medium. After water comes to a boil, cook 10-12 minutes (they won't be completely done until later). Drain water from yams. Use a frying pan and add 2 TBSP canola oil. Add yams to frying pan and sprinkle the brown sugar over the top of the yams (1/2 cup brown sugar for not-so-sweet; 3/4 cup brown sugar if you like them sweeter). Put a lid on the frying pan and cook on medium heat for 15-20 minutes, turning them every 5 minutes.
