#3319 - Multi Potato Salad

1 large sweet potato
3 red potatoes
3 russet potatoes
1 cup mayo
2 TBSP white sugar (more if you wish)
1 TBSP white vinegar (more if you wish)
1 tsp. salt
3/4 tsp. dill weed
onion salt (optional--your choice of amount)

Wash, peel and cube the russet potatoes. Wash and cube the red potatoes (do NOT peel). Wash, peel and cube the russet potatoes. Place all of the potatoes and 1 tsp. salt in a pot--add enough water to cover all of the potatoes. Bring the water to a boil over medium heat. Once boiling, turn heat back to low and cook until all potatoes are fork tender. Drain but do NOT rinse, then cool to room temperature. In a separate bowl add mayo, white sugar, dill weed and onion salt--stir until mixed. Taste--if you want it more sour, add more white vinegar and stir again. If you like it more sweet, add a little more white sugar and stir again. Add more salt if necessary--stir again. Pour the mayo mixture over the cooled potatoes--used a wooden spoon to toss/stir until potatoes are covered with the mayo mixture (it's ok if the sweet potato pieces don't hold up). Cover the bowl and refrigerate overnight before serving.

#2007 - Rice Krispie Sweet Potatoes

2 - 23oz. cans sweet potatoes (drained)
6 TBSP softened Parkay margarine
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
2 cups mini marshmallows
2 TBSP Domino's dark brown sugar (packed)
2 cups rice krispies cereal

In a mixer add drained sweet potatoes, 4 TBSP margarine, salt, cinnamon and nutmeg--beat until smooth. Remove from mixer--add 1 cup of the mini marshmallows--stir. Grease a glass baking dish. Pour the mixture evenly into the bottom of the greased dish. Spread the other 1 cup of mini marshmallows evenly over the top. Melt the other 2 TBSP of Parkay--add brown sugar to melted margarine--stir until mixed. Add rice krispies--stir until mixed. Spread the brown sugar mixture over the marshmallows. Bake at 350 degrees for 20 minutes or until hot and topping is golden brown.

#253 - Baked Ham

1 - 16oz. canned ham
1 - 3oz. package orange Jell-O
1/3 cup Domino's dark brown sugar (packed)
2 tsp. dry mustard
1 cup boiling water
1 - 17oz. can canned sweet potatoes or yams

In a bowl, dissolve Jell-O, brown sugar, dry mustard in the boiling water. Place the opened canned ham in a shallow pan and arrange the sweet potatoes or yams along the sides of the ham. Pour the Jell-O mixture over the ham and potatoes. Bake at 350 degrees for 1 hour. Baste using the juice in the bottom of the pan every 15 minutes while it's cooking.

#167 - Sweet Potato Casserole

3 cups mashed sweet potatoes (or yams), fresh or canned
1/2 cup melted butter
1 cup white sugar
1/3 cup milk
2 eggs, beaten
1 tsp. vanilla
1 cup brown sugar
1/3 cup butter
1 cup chopped pecans
1/2 cup flour

Mix sweet potatoes, 1/2 cup melted butter, white sugar, milk, 2 beaten eggs, and vanilla in a large bowl. Pour into a greased baking dish or casserole dish. For the topping, mix brown sugar, 1/3 cup butter, pecans, and flour in a bowl. Sprinkle the topping evenly on top of the sweet potato mixture. Bake at 350 degrees for 25-30 minutes.

#142 - Sweet Potato Pie

4 large yams
3 eggs
1/3 cup white sugar
1 tsp. lemon juice
3/4 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1/4 tsp. salt
1 1/2 cups light cream
4 TBSP melted butter
1 unbaked 9" pie shell (if you want to make the pie shell from scratch, check out our recipe #33)

Bake the yams at 400 degrees on a cookie sheet or in a cake pan until tender (test with a fork). Remove from oven, peel them, and mash them with a potato masher. Beat 3 eggs and add to the mashed yams. Add the sugar, lemon juice, cinnamon, allspice, nutmeg, and salt. Stir everything with a spoon until well mixed. Add the light cream and stir. Add the melted butter and stir with a spoon. Spray the pie dish with Pam, insert the unbaked pie crust, then spray the inside of the pie crust with Pam also. Scoop mixture into the unbaked pie shell and bake 400 degrees for 50 minutes.
