#874 - Leftover Mashed Potato Biscuits

2 1/2 cups flour
2 TBSP baking powder
1 tsp. salt
1/4 cup white sugar
1/4 cup butter
1 1/2 cups mashed potatoes (they come out much better if you use leftover mashed potatoes instead of fresh ones)
1 beaten egg
1/3 cup water
1/3 cup milk
Parmesan cheese/garlic powder (optional)

In a bowl add flour, baking powder, salt, white sugar--stir. Add butter and stir/cut in. Add leftover mashed potatoes and press the mixture with a fork to mix. Add the beaten egg, water and milk--keep mixing with a fork until dough forms. Lightly flour your counter, then knead the potato dough until it holds its shape. Use a rolling pin to roll the dough to 3/4" thick. Cut biscuit circles (with the lip of a drinking glass or a biscuit cutter if you have one). Place the biscuit circles on to UNGREASED cookie sheets. If you like, you can brush the tops of the biscuits with a bit of melted butter or sprinkle with a bit of Parmesan cheese or garlic powder. Bake at 450 degrees for 17-20 minutes or until biscuits are done to your taste.
