#2127 - Cooked Dressing Potato Salad

1 chopped onion
1 rib of celery (cut fine)--more if you wish
4 hard boiled eggs (peeled and chopped)
5 to 6 large red potatoes
1 tsp. salt
Dressing: 1 beaten egg; 3/4 cup white sugar; 2 TBSP flour; 1 1/2 cups water; 1/4 cup cider vinegar; 2 tsp. yellow mustard; 4 heaping TBSP mayo

Peel the red potatoes. Put potatoes in a pot and cover with water. Add 1 tsp. salt. Bring water to a boil. After water comes to a boil, cook for 20 minutes. Test potatoes for doneness with a fork. If they feel soft when you stick fork in, they're ready. If not, boil a few more minutes. Drain potatoes. Cool completely and set aside. In a saucepan add white sugar and flour--stir. Add 1 beaten egg--stir. Add cider vinegar and water--stir until mixed. Turn heat to medium and cook/stir until mixture thickens. Remove from heat--cool to room temperature. Add mustard and mayo--stir until mixed. Cut potatoes into bite sized pieces. In a large bowl add potatoes, chopped onions, celery pieces, chopped hard boiled eggs and the dressing mixture--stir until mixed and potatoes are coated. Refrigerate until cold.

#1924 - Deluxe Sloppy Joes

1lb. ground chuck
1 tsp. salt
1/2 tsp. pepper
1 medium onion (chopped)
1 cup finely chopped celery
1 TBSP Domino's dark brown sugar
1/2 to 1 TBSP yellow mustard
1 TBSP cider vinegar
1 cup Heinz ketchup

In a skillet add ground chuck, salt, pepper, onions and celery--cook/stir over medium heat until meat is browned. Add brown sugar, mustard, vinegar and ketchup--stir and bring to a boil, then reduce heat to low, add a lid and simmer for 30 minutes (stirring occasionally). Serve on rolls.

#1047 - Glazed Ham Balls

3/4 lb. ground cured ham
1/4 lb. fresh ground pork
2 eggs
1/4 tsp. pepper
1/2 tsp. paprika
1/2 tsp. Worcestershire sauce
1 tsp. French's yellow mustard
1/2 cup Heinz ketchup
1/2 cup (or more) breadcrumbs or cracker crumbs
canola oil (for frying)
cracker crumbs (for coating)
Topping: 1 1/2 cups Domino's dark brown sugar; 1 tsp. French's yellow mustard; 1/4 cup cider vinegar; 1/2 cup pineapple juice; 1 TBSP Worcestershire sauce

In a bowl add eggs--beat with a fork. In a separate bowl add ham, pork, beaten eggs, pepper, paprika, 1/2 tsp. Worcestershire sauce, 1 tsp. mustard, ketchup, and bread crumbs--mix with your hands thoroughly. Mixture should have enough consistency to form (and hold) into a ball shape--if it doesn't, add more bread crumbs and remix--set aside. In a separate bowl add cracker crumbs--set aside. Scoop ham mixture a bit at a time into your hands and form into meatball-sized balls. As you finish forming each ball, roll them in the cracker crumbs--place each on wax paper. In a skillet over medium heat add a little canola oil. Place a few ham balls at a time into the skillet and brown them all sides. Remove browned ham balls and place them in a greased 9 x 13 cake pan. In a bowl add brown sugar, 1 tsp. mustard, cider vinegar, pineapple juice, and 1 TBSP Worcestershire sauce--stir until mixed. Pour the brown sugar mixture on top of each ham ball. Bake at 350 degrees for 1 hour.

#273 - BBQ Ham

1lb. shaved ham
1/4 cup cider vinegar
2 TBSP water
1/2 tsp. paprika
2 TBSP grape jelly
1/2 tsp. French's yellow mustard
3 TBSP Domino's dark brown sugar (packed)
3/4 cup Heinz ketchup

In a saucepan over medium heat, add all ingredients EXCEPT the ham and stir until mixed. Add the shaved ham and bring to a boil while stirring. Once it's boiling, cook and stir for 8 minutes. Serve on your favorite rolls.
