#3093 - Parmesan Tomato Soup

2 small onions (chopped)
2 TBSP canola oil OR olive oil
1 - 28oz. can whole peeled tomatoes
4 cups chicken broth
1 tsp. oregano
1 small block fresh Parmesan cheese (shaved)
Italian style croutons
ground black pepper to taste
salt (if needed; the chicken broth usually makes it salty enough)

In a Dutch oven over medium heat add canola oil and chopped onions--cook/stir until onions are tender. Add the whole peeled tomatoes and any juice in the can, chicken broth, oregano and ground black pepper to the onions--turn heat to simmer, stir, and simmer for 15 minutes. Remove from heat--transfer mixture into a blender and blend on high speed until mixed and smooth. If soup is hot enough, pour soup into bowls and top the soup with croutons and some shaved Parmesan cheese. If you want the soup hotter, pour the mixture back into the Dutch oven and cook/stir over medium low heat until hot before putting in bowls and adding croutons/Parmesan cheese.

#3083 - Fresh Tomato Pasta

8oz. any shape pasta
1/2 lb. of your favorite Italian sausage (loose)
2 tsp. olive oil
1/2 to 1 cup chopped onions
2 tsp. minced garlic
1 lb. whole tomatoes (chopped)--more if you wish
1/4 tsp. salt
1/8 tsp. fresh ground black pepper
fresh grated Parmesan cheese

Cook and drain pasta according to box directions but do NOT rinse--set aside. Cut the sausage into coin shaped pieces, remove the casings from each sausage piece, then cut each sausage piece into quarters. In a skillet over medium heat add olive oil, loose sausage pieces and chopped onions--cook/stir until sausage is browned and onions are tender. Add the minced garlic, salt, pepper and chopped tomatoes--cook/stir until mixture is hot. Remove from heat--add drained pasta--stir to mix. Sprinkle with fresh Parmesan cheese.

#699 - Chicken Marengo

2 TBSP canola oil
2 to 2 1/2 lbs. chicken breasts
1 - 16oz. can whole tomatoes (do not drain)
1/2 cup chopped red peppers
1 clove garlic (finely chopped)
1 envelope Lipton onion mushroom soup mix

In a skillet add canola oil over medium heat--brown chicken breasts on both sides. Remove browned chicken--set aside. In the same skillet that you browned the chicken add whole tomatoes, chopped garlic, chopped red peppers and soup mix. Stir. Cut the chicken into bite sized pieces and add chicken to the tomato mixture--stir. Put a lid on the skillet and simmer for 45 minutes or until chicken is tender (turn chicken and stir mixture a few times while it's simmering).

#383 - Beef Roast

2 1/2 lb. sirloin tip roast (minimum)
5 large red potatoes (quartered and washed, but NOT peeled)
4 long pieces of celery from a stalk (cut into 1" pieces)
1 lb. baby carrots
1 envelope Lipton onion soup mix
1 - 14oz. can peeled whole tomatoes (slice in thirds and reserve the juice)
water
1 Reynolds oven bag -- (plastic)-- large size

Use a baking dish large enough to hold roast and other ingredients. Spray the inside of the cooking bag with Pam. Put the roast in the center of the bag, then arrange potatoes, celery and carrots around the roast. Sprinkle the onion soup mix over the top of the roast. Place the sliced tomatoes on top of the roast. Pour the tomato juice in a bowl, then fill the tomato can with water and add to juice and stir. Pour the liquid over the vegetables. Shut the bag with the provided twister and use a knife to poke holes in the top of the bag. Bake at 350 degrees for 3 hours or until meat and potatoes are tender.

#317 - Turkey and Cheese Chili

1 lb. ground turkey
1 small onion, chopped
1/2 cup chopped green pepper
1 - 15oz. can kidney beans, drained and rinsed
1 - 14.4oz. can whole tomatoes, undrained
1 - 8oz. can tomato sauce
1 TBSP chili powder
1 1/2 cups shredded cheddar cheese

Cook turkey in large skillet on medium heat until no longer pink, stirring frequently. Add onion and green pepper; cook and stir until tender. Add beans, tomatoes, tomato sauce and chili powder; mix well. Reduce heat to low; cover and simmer 30 minutes, stirring occasionally. Sprinkle 1/4 cup of the cheese onto the bottom of each of six soup bowls, then cover with chili. Top evenly with remaining cheese. Serve with crackers.
