#1251 - Crockpot Chicken and Ramen

6 boneless/skinless chicken breasts OR skinless chicken thighs
16 oz. baby carrots (washed and cut into coin shaped pieces)
1/2 cup chopped celery
1 - 8oz. can sliced bamboo shoots (drained)
1 - 8oz. can sliced water chestnuts (drained)
2 - 3oz. ramen noodles (chicken flavor)
32oz. chicken broth
1 cup sugar snap peas
2 green onions (chopped)
salt and pepper to taste

Salt and pepper each chicken breast--add carrots, celery, bamboo shoots, water chestnuts, ONE of the ramen noodles seasoning packets, chicken breasts, and chicken broth to the crockpot--put the lid on, turn heat to low and cook 7-8 hours. When ready to serve use tongs to remove the chicken breasts and cut them into bite sized pieces and return them to the crockpot--stir. Break both ramen noodles packages using your hands and put the broken noodles into the crockpot--stir. Add the sugar snap peas and the chopped green onions--turn crockpot heat on high, stir and cook ten minutes or until noodles are done (with lid on the crockpot). Add second seasoning pack if you wish.

#820 - Beef Stew

2 to 2 1/2 lbs. sirloin tip roast beef
1 chopped onion
1/2 cup chopped fresh parsley
2 ribs of celery (chopped)
celery leaves/heart from the inside of the celery stalk (finely chopped)
3 tsp. salt
1 tsp. pepper
1/2 cup water + 2 qt. water
6-8 red potatoes (peeled, washed and cut into bite sized pieces)
2 - 1lb. bags baby carrots
1 can canned tomatoes (about 16 oz.)

Place the roast beef in a Dutch oven, add 1/2 cup water and 1 tsp. salt--cook on medium and keep turning the roast until both sides are browned and the water cooks off (about 20 minutes). Add 1 qt. water to the roast--bring the water to a boil. Turn heat down to low and simmer for 3 to 3 1/2 hours until meat is done--test with a fork for tenderness. Remove the roast and put it in a casserole dish to cool--refrigerate once cooled. Drain the broth into a container, let it cool on the counter and refrigerate the broth overnight. The next day, scoop the grease off of the top of the broth and throw the grease away. Put the remaining broth in a 4-5 qt. pot--add the chopped onion, chopped parsley, chopped celery, chopped celery heart and leaves to the broth--stir. Turn heat to medium and add 1 qt. water to the broth mixture--stir. Add 2 tsp. salt and 1 tsp. pepper--stir. Add baby carrots and canned tomatoes--stir. Cook on medium until carrots are partially tender--stir occasionally. While the stew is cooking, wash/peel/chop potatoes into bite sized pieces. Add potato pieces to the stew--stir. Cook on medium heat until potatoes are tender--test with a fork. Cut the roast beef into bite sized pieces--add to the stew and stir. Cook on medium until the meat is hot, then serve. If it doesn't seem like there is enough broth, add more water a little at a time.

#595 - Roasted Chicken Dinner

1 Reynolds oven bag (large size - 14" x 20")
1 TBSP flour
1 tsp. garlic salt
1lb. baby red potatoes (washed)
1 - 8oz. package peeled baby carrots
2 stalks celery (chopped)
1 medium onion (chopped)
1 - 4lb. or 5lb. whole chicken
1 tsp. paprika
2 tsp. salt
1 tsp. pepper
1/2 cup water

Preheat oven to 350 degrees. Open the oven bag. In a bowl add the flour, 1 tsp. paprika, 1 tsp. garlic salt, 2 tsp. salt, 1 tsp. pepper--stir with a spoon. Place oven bag in a 9 x 13 baking dish. Open the end of the bag and spray the inside with Pam. Add the carrots, celery, onion and potatoes to the bag. Sprinkle some of the spice mixture over all of the vegetables. Spray the chicken with Pam and place it carefully inside the bag in the center of the vegetables. Sprinkle the rest of the spice mixture on the chicken and rub where necessary to make it stick. Carefully pour the 1/2 cup water into the bottom of the bag. Close the oven bag with the tie provided in the oven bag box. Use a sharp knife to poke 6 slits in the top of the bag--YOU MUST MAKE SLITS or the bag will burst. Bake at 350 degrees for 90 minutes or until tender.

#383 - Beef Roast

2 1/2 lb. sirloin tip roast (minimum)
5 large red potatoes (quartered and washed, but NOT peeled)
4 long pieces of celery from a stalk (cut into 1" pieces)
1 lb. baby carrots
1 envelope Lipton onion soup mix
1 - 14oz. can peeled whole tomatoes (slice in thirds and reserve the juice)
water
1 Reynolds oven bag -- (plastic)-- large size

Use a baking dish large enough to hold roast and other ingredients. Spray the inside of the cooking bag with Pam. Put the roast in the center of the bag, then arrange potatoes, celery and carrots around the roast. Sprinkle the onion soup mix over the top of the roast. Place the sliced tomatoes on top of the roast. Pour the tomato juice in a bowl, then fill the tomato can with water and add to juice and stir. Pour the liquid over the vegetables. Shut the bag with the provided twister and use a knife to poke holes in the top of the bag. Bake at 350 degrees for 3 hours or until meat and potatoes are tender.
