#3190 - Omelette Muffins

1/2 pound loose sausage (your choice of flavor)
12 eggs
1/2 cup chopped onions
1/4 cup chopped red bell peppers OR green bell peppers
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/2 cup shredded cheese (your choice of flavor)

In a cast iron skillet cook/brown loose sausage, then drain off all the grease. Break all of the eggs into a large glass bowl--beat with a whisk. Add chopped onions, chopped peppers, salt, pepper and garlic powder--beat with a whisk. Add drained sausage and shredded cheese--stir with a wooden spoon until mixed. Grease the cups of a muffin tin. Use a ladle to spoon the egg mixture into the cups of muffin tins (stir egg mixture in between filling each cup so that the sausage stays mixed and doesn't all float to the bottom). Repeat until all egg mixture is evenly distributed in all of the greased muffin cups. Bake at 350 degrees for 23-25 minutes--test with a knife for doneness.

#2647 - Sausage Dip

1lb. loose fresh sausage
1 can original Rotel tomatoes and chilis
1 - 8oz. Philadelphia cream cheese (cubed and softened)

In a skillet add loose sausage--cook/stir over medium heat until browned, then drain. In a crockpot add browned sausage, Rotel and cream cheese--stir until mixed. Turn crockpot on medium until mixture is hot--stir. Turn heat back to low and serve dip warm with tortilla chips.

#2417 - Sausage Ziti

8oz. hot Italian OR regular sausage (casings removed)
2 TBSP butter
2 TBSP flour
2 cups milk
8oz. raw ziti pasta
1 1/2 lbs. broccoli (stems removed--cut florets into bite sized pieces)
1/2 cup grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper

In a skillet over medium heat add butter and loose sausage--cook/stir until sausage is browned. Sprinkle the flour over the browned sausage--cook/stir for another 2 minutes. Slowly add milk--cook/stir until mixture is thickened. Add salt and pepper--stir and set aside. Cook ziti according to box directions--when there is 5 minutes left in your ziti cooking time add the broccoli pieces to the ziti. When ziti is done, drain but do NOT rinse the ziti/broccoli mixture. Grease a 2 qt. casserole dish. Pour the ziti mixture into the sausage mixture--stir until mixed. Pour the whole mixture into the greased casserole dish. Sprinkle the Parmesan cheese over the top. Bake at 350 degrees for 20-25 minutes or until hot.

#2311 - Rice and Sausage Casserole

1lb. loose sausage (no casing)
1 1/2 cups sliced red potatoes
1/2 cup chopped onions
1 cup sliced raw carrots
1/2 cup uncooked Minute rice
1 1/2 cups canned tomatoes
1 tsp. salt
1/2 tsp. pepper
1 1/2 TBSP white sugar
shredded cheese (your choice of flavor)

In a skillet over medium heat add loose sausage and chopped onions--cook/stir until sausage is browned. Grease a 2 qt. casserole dish. In a bowl add canned tomatoes, salt, pepper and white sugar--stir to mix. Add layers in the casserole in the following order: potatoes, carrots, uncooked rice, sausage/onion mixture, and then canned tomatoes over the top. Cover and bake at 350 degrees for 80 minutes, remove and uncover, spread shredded cheese over the top and bake uncovered 10 minutes longer.

#2185 - Sharp Cheese Sausage Casserole

1 1/2 lbs. smoked sausage (removed from casings OR cut into bite sized pieces after browning)
1 - 8oz. sharp cheese (shredded)
1 cup sour cream
1/2 of a small onion (grated)
1 or 2 TBSP chopped parsley
1/2 tsp. salt
1/2 tsp. pepper
6 medium red potatoes (washed, peeled, cooked until tender, cooled and cut into bite sized pieces)
milk (if necessary)

Cut the sausage into coin shaped pieces. In a skillet over medium heat add sausage and a little water--cook/stir until browned, then drain the sausage and cut into bite sized pieces. In a large bowl add drained sausage, shredded sharp cheese, sour cream, grated onions, parsley, salt and pepper--stir to mix. If it seems too thick add a little milk and stir again. In a greased casserole dish make multiple layers of the sausage mixture and the potato pieces. Bake (covered) at 350 degrees for 40 minutes. Stir well before serving.
