#3761 - Baked Chicken and Onions

2 TBSP butter
2 sweet onions (peeled, sliced and rings separated)
a few garlic cloves (sliced thin)
1/4 cup A1 steak sauce (the thick and hearty variety)
2 TBSP Domino's dark brown sugar (packed)
4 boneless/skinless chicken breasts
salt
pepper
2 TBSP Dijon mustard
fresh grated Parmesan cheese

Salt and pepper both sides of each chicken breast and place them in a greased glass baking dish. In a large skillet over medium heat add butter--melt. Add sliced onions and cover the skillet--stir them every 3 minutes until they've cooked a total of 9 minutes. Add sliced garlic--keep cooking/stirring for around 10 minutes or until onions are a nice caramel brown color. Add the brown sugar and 3 TBSP of the A1 sauce--cook/stir until incorporated. Remove from heat. In a bowl add the remaining A1 sauce and the dijon mustard--stir to mix. Spread the mustard mixture evenly over each chicken breast. Use tongs to spread the onion mixture over the chicken breasts. Bake at 400 degrees 30-40 minutes or until chicken is no longer pink inside. Remove from oven and sprinkle fresh grated Parmesan cheese over the chicken breasts.

#1348 - Italian Vegetable Soup

1lb. ground chuck
1 tsp. salt
1/2 tsp. pepper
1 chopped onion
1 cup chopped celery
1 cup sliced carrots (coin shaped pieces)
2 garlic cloves (minced)
1 - 16oz. can chopped tomatoes
1 - 15oz. Hunt's tomato sauce
1 - 15oz. can kidney beans (do not drain)
2 cups water
5 tsp. beef bullion
1 tsp. dried parsley
1/2 tsp. oregano
1/2 tsp. basil
2 cups shredded cabbage
1 cup cut green beans
1/2 cup (or more) shell pasta
shredded Parmesan cheese

In a skillet over medium heat add ground chuck, chopped onions, salt and pepper--stir and cook until beef is browned. Dump the beef mixture into a Dutch oven. Add celery, carrots, garlic, tomatoes, kidney beans, tomato sauce, water, beef bullion, parsley, oregano, basil, shredded cabbage--stir until mixed, then turn heat to medium and bring to a boil (stir occasionally). Once boiling, turn heat to simmer--simmer for 20 minutes (stir occasionally). Add green beans and pasta--stir, then simmer until vegetables are hot and pasta is done to your liking. Serve in bowls and top each bowl with shredded Parmesan cheese.

#1113 - Crock Pot Lasagna

1lb. ground chuck
1 chopped onion
2 minced cloves garlic
1 - 29oz. jar tomato sauce
1 cup water
1 - 6oz. can hunt's tomato paste
1 tsp. salt
1/2 tsp. pepper
1 tsp. oregano
1 - 8oz. box Barilla no boil lasagna noodles
16oz. shredded mozzarella cheese
1 - 12oz. small curd cottage cheese
1/2 cup fresh grated Parmesan cheese

In a bowl add cottage cheese, mozzarella cheese, and grated Parmesan cheese--stir until mixed, then set aside. In a skillet over medium heat add ground chuck, chopped onion, salt, pepper and garlic--cook and brown the meat. Once meat is done, drain the meat mixture. Put drained meat back in the skillet but NOT back on the stove--add tomato sauce, water, tomato paste and oregano to the meat mixture--stir until mixed. In a 5 qt. crock pot add 1/4 of the meat sauce. Place 1/3 of the lasagna noodles on top of the sauce. Scoop 1/3 of the cheese mixture on top of the noodles. Keep layering in the same order--you should end up with the last 1/4 of the meat sauce to put on top. Cover the crockpot with the lid--cook on low heat for 4-5 hours or until lasagna noodles are tender.
