#3303 - Easy Turkey Meatballs

1lb. ground turkey
1 beaten egg
1/2 cup breadcrumbs
1/2 tsp. oregano
1/2 tsp. pepper
1/2 tsp. salt
1 cup chopped parsley
1/4 cup finely chopped onions
3 garlic cloves (minced)

In a small bowl add minced garlic, chopped onions, chopped parsley, salt, pepper and oregano--stir to mix. In a large bowl add ground turkey and beaten egg--mix with your hands. Sprinkle the onion mixture and breadcrumbs all over the turkey mixture--mix with your hands until well mixed. Spray a skillet with Pam. Shape the turkey mixture into 1" meatballs. Place half of the meatballs in the greased skillet--cook/stir over medium heat until outsides are browned and insides are cooked (6-8 minutes). Repeat with remaining meatballs. Optional: if you would rather bake them, place them in a greased glass baking dish and bake at 350 degrees for 30-35 minutes.

#1998 - Baked Ranch Chicken

1 envelope Hidden Valley Ranch ranch dressing mix
1/4 cup unseasoned breadcrumbs
6-8 pieces of chicken
bowl of milk

In a Ziploc bag add ranch dressing powder and breadcrumbs--shake to mix. Dip each chicken piece in milk, then place the chicken piece in the bag and shake to coat. Repeat with all chicken pieces. Place chicken pieces in a greased 9 x 13 glass baking dish. Bake at 375 degrees for 25 minutes, then turn all chicken pieces and bake another 25 minutes or until chicken is no longer pink.

#1061 - Veal Pork Loaf

2 lbs. ground fresh veal
1 lb. ground fresh pork
3 eggs
1 tsp. salt
1/2 tsp. pepper
1 chopped onion
1/2 cup chopped parsley
1/2 can Campbell's cream of mushroom soup
1/2 cup to 1 cup breadcrumbs (enough to shape it into a loaf)

In a bowl add veal and pork--mix with your hands. Beat eggs slightly in a bowl--add to veal mixture. Add salt, pepper, chopped onion, and chopped parsley to the veal mixture--mix with your hands. Add 1/2 can of mushroom soup and breadcrumbs--mix with your hands. Add as many breadcrumbs as you need and re-work until it's stiff enough to make a loaf. Cut mixture in half and use your hands form two loaves from the veal mixture. Place each loaf into a separate greased loaf pan--add 1/4 cup to 1/2 cup water to each loaf pan. Bake at 350 degrees for 45 minutes to 1 hour (or until browned). Slice to serve--serve with mushrooms, tomato sauce, ketchup--whatever you like.

#94 - Meatloaf

1 envelope Lipton Recipe Secrets Onion Mushroom soup mix
2 pounds ground chuck
1 1/2 cups fresh filling bread (or break up your own using fresh bread)
1/2 cup seasoned 4C breadcrumbs
2 eggs
1/2 tsp. salt
1/2 tsp. pepper
3/4 cup ketchup
1/4 cup water
3 TBSP Worcestershire sauce
1 medium chopped onion
1 - 12oz. can mushrooms chopped (optional)

In a large bowl, combine all ingredients and mix thoroughly using your hands. Shape it into either one large loaf or two smaller loaves. Spray a baking pan with Pam and add 1/4 cup water. Place meatloaf in the pan. Bake at 350 degrees (uncovered) for one hour (should be brown on top). If you make just one large loaf it will take longer to get done.
