#3656 - Cajun Gumbo Dip

1/4 cup butter
6 green onions (sliced)
2 ribs of celery (chopped)
1/4 cup chopped red bell peppers
1/4 cup chopped green bell peppers
1/4 cup chopped orange bell peppers
1/4 cup chopped yellow bell peppers
1 1/2 lbs. large raw shrimp (peeled and chopped)
1 garlic clove (minced)
1 1/2 tsp. creole seasoning
1 - 8oz. Philadelphia cream cheese (softened and cubed)
3/4 cup sliced pickled okra
1/2 cup fresh grated Parmesan cheese (plus extra for sprinkling)
2 TBSP chopped fresh parsley
good quality crackers

In a Dutch oven over medium heat add butter--melt. Add sliced green onions, chopped celery and all four colors of chopped bell peppers--cook/stir until tender. Add chopped shrimp, minced garlic and creole seasoning--cook/stir for 2 minutes. Turn heat back to low and add cream cheese--cook/stir until cream cheese is melted. Remove from heat--add sliced okra and 1/2 cup fresh grated Parmesan cheese--stir to mix. Pour the mixture into a greased 2qt. baking dish. Bake at 400 degrees for 20 minutes, then sprinkle more grated Parmesan cheese over the top and return to oven 5-10 minutes longer or until hot and bubbling. Serve hot with good quality crackers.

#3391 - Battered Shrimp

1 cup Bisquick (plus extra for drenching)
1/2 tsp. garlic powder
1/2 cup beer
1 beaten egg
1 lb. uncooked large shrimp (peeled and de-veined; if frozen, thawed, drained and rinsed, then dried on paper towels)
cocktail sauce (for dipping)

Fill a cast iron skillet 1/3 full with canola oil--bring oil to 375 degrees over medium heat. In a bowl add 1 cup Bisquick, garlic powder, beer and beaten egg--stir with a whisk until smooth. In a small bowl add a little Bisquick for drenching. Drench each piece of shrimp in the Bisquick, then coat the same shrimp in the batter and place it in the hot oil. Repeat with all shrimp but don't let them touch each other in the skillet. Fry until bottoms are golden brown, then flip and fry until other side is also golden brown. Place fried shrimp on paper towels to soak up extra grease. Serve with cocktail sauce.

#1922 - Shrimp Scampi

2lbs. large raw shrimp
1/2 cup butter
1 tsp. salt
6 garlic cloves (minced)
1/4 cup chopped parsley

Clean and de-vein shrimp--wash them under cold water, then drain them well. Add butter to a glass 13 x 9 glass baking dish. Place in oven at 400 degrees just until butter melts. Remove dish from oven--add salt, minced garlic and parsley to the melted butter--stir to mix. Arrange the shrimp in a single layer in the butter mixture. Bake at 400 degrees for 5 minutes--remove from oven and use tongs to turn each piece of shrimp. Return to oven and bake another 8-10 minutes or until shrimp turn pink.

#1892 - Bowtie Shrimp Salad

1 - 1lb. box bowtie noodles (cooked according to box directions--drained but NOT rinsed)
1lb. fresh shrimp (cooked, peeled and cut into bite sized pieces)
1 cup frozen peas (thawed)
2 ribs celery (chopped)
1 - 8oz. bottle Wishbone robusto Italian dressing
Parmesan cheese

In a large bowl add cooked pasta, shrimp, thawed peas and chopped celery--toss to mix. Add Italian dressing--toss to coat. Refrigerate until cold. Add Parmesan cheese just before serving--toss to coat.

#934 - Shrimp Casserole

6 slices of bread
1 lb. cooked/peeled shrimp
1/2 lb. shredded sharp cheese
1/4 cup butter OR Parkay margarine (melted)
1/2 tsp. French's mustard
3 beaten eggs
2 cups milk
salt and pepper to taste
Old Bay Seasoning (optional)

In a bowl beat the eggs--add the mustard, milk, salt and pepper to your taste, and Old Bay to your taste--stir. Break bread into bite sized pieces. Grease a 2 qt. casserole. Making layers, add shrimp, bread crumbs and cheese to the greased casserole dish. As you finish each layer pour a little of the milk mixture on each layer. Keep alternating layers and adding milk mixture until bread crumbs are the last layer on top. Slowly pour melted butter over the top of the bread crumbs. Cover and bake at 350 degrees for 50 minutes--remove from oven, uncover, return to oven for 10 more minutes or until bread crumbs are browned.

#859 - Shrimp Pasta

1/2 cup balsamic vinaigrette salad dressing
1lb. fresh or frozen shrimp (thawed, de-veined and peeled)
4 chopped tomatoes
1 - 4oz. Philadelphia cream cheese (1/2 of an 8oz. package)
3/4lb. fettuccine (cooked and drained according to box directions)
1/2 cup Parmesan cheese

Clean and drain the shrimp--place them in a Ziploc bag. Pour the balsamic vinegar in with shrimp--zip the bag and let them marinate for 30 minutes. Remove the shrimp pieces and throw away the marinade and the bag. In a skillet over medium heat stir and cook shrimp on both sides until they turn pink. Remove the shrimp and place in a bowl--set aside. Cook fettuccine according to box directions--drain when finished. In the same skillet you cooked the shrimp, add the chopped tomatoes over medium heat--cook and stir for 3 minutes. Cube the cream cheese, then add to the tomatoes in the skillet. Add the shrimp to the tomato/cream cheese mixture--stir and cook over medium heat until well heated. Serve pasta on plates with shrimp sauce and Parmesan cheese.
