#3681 - Four Cheese Macaroni Casserole

3 cups raw macaroni
28oz. whole peeled tomatoes (drained and chopped; you can use fresh tomatoes if you have them)
1 tsp. Italian seasoning
1 tsp. oregano
1 tsp. basil
salt (to your taste)
pepper (to your taste)
1 1/2 cups grated cheddar cheese
1 1/2 cups shredded mozzarella cheese
3/4 cup fresh grated Parmesan cheese
1/4 cup crumbled feta cheese

Cook macaroni in salted water until softened but still chewy. Drain but DO NOT RINSE. In a large bowl add drained (still hot) macaroni, 1 cup of the cheddar cheese, 1 cup of the mozzarella cheese and 1/2 cup of the Parmesan cheese--stir carefully until cheeses melt. In a separate bowl add chopped tomatoes, Italian seasoning, oregano, basil, salt and pepper--stir well. Pour the tomato mixture into the pasta mixture--stir to combine. Pour the whole mixture into a greased casserole dish. Sprinkle the remaining 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese and all of the feta cheese over the top. Bake at 350 degrees 20-30 minutes. Note: you can omit the feta cheese if you don't like feta cheese.

#2455 - Hot Dog Potato Casserole

5-6 red potatoes (washed, peeled and sliced thin)
8 thawed hot dogs
1/2 lb. cheddar cheese (grated)
1 tsp. French's yellow mustard
1/2 cup flour
1/8 tsp. salt
2/3 cup milk

Slice the hot dogs into coin shaped pieces, place them in a greased skillet--cook/stir over medium low heat until browned. Slowly add milk, flour and salt to hot dogs--stir until mixed and thick. Remove from heat--add mustard and grated cheese--stir until mixed. Grease a 2 qt. casserole dish. Make alternating layers of sliced potatoes, then hot dog mixture. Keep making layers and end with a potato layer as the last layer on top. Cover and bake at 350 degrees for 1 hour or until potatoes are tender.

#1070 - Scratch Cheese Puffs

2 cups grated cheddar cheese (MUST be room temperature)
1/2 cup softened butter (room temperature)
1/4 tsp. to 1/2 tsp. paprika
1 cup flour (sifted)
1/8 tsp. salt

In a large bowl add grated cheese, softened butter, paprika, flour and salt--work it with your hands until it forms dough. Using your hands roll little dough at a time into a marble sized ball. Repeat until you run out of dough. Place them all on greased cookie sheets. Bake at 350 degrees for 12-15 minutes or until done to your liking. Best to do a tester on this recipe.

#655 - Three Cheese Potato Bake

2 - 10.75oz. cans Campbell's cream of chicken soup
1 - 8oz. sour cream
1/2 tsp. pepper
1 - 30oz. package frozen Ore Ida hash brown potatoes
3/4 cup chopped onions
1 - 2oz. jar pimentos (drained and chopped)
3/4 cup shredded sharp cheddar cheese
3/4 cup shredded swiss cheese
1/4 cup grated Parmesan cheese
1 Reynolds Pot Lux disposable 8 x 8 pan

In a bowl add soups, sour cream, pepper--stir. Add frozen hash browns--stir. Add chopped onions and drained/chopped pimentos--stir. Add cheddar cheese and swiss cheese--stir. Spray the disposable pan with Pam, then pour entire potato mixture evenly into the pan. Sprinkle the Parmesan cheese over the top. Place the pan on a cookie sheet to catch drips. Bake uncovered at 375 degrees for 1 hour to 1 hour 15 minutes or until bubbling and golden brown--make sure you use the cookie sheet to pick it up out of the oven because the throwaway pans are flimsy.

#635 - Skillet Chicken Divan

6oz. uncooked spaghetti (broken in thirds)
1/4 cup butter
2 cups small broccoli florets
1 cup sliced fresh mushrooms
1 1/2 cups milk
2 TBSP flour
2 cups cheddar cheese (cubed)
1 - 9oz. package frozen pre-cooked chicken pieces (thawed)

Break spaghetti into thirds and cook spaghetti according to box directions--drain and keep warm. In a 12" skillet melt the butter until sizzling. Add broccoli and mushrooms--stir and cook over medium heat until vegetables are tender. Remove vegetables from skillet--set them aside in a bowl. In a separate bowl add the milk and flour--stir until smooth. Add the milk mixture to the empty skillet--cook and stir over medium heat until it comes to a boil. Boil for 1 minute. Take out 1 cup of cheese cubes and set aside--add the other cup of cheese cubes to the skillet with the milk/flour. Stir and cook until cheese is melted. Add the hot drained spaghetti, broccoli, mushrooms and thawed chicken pieces to the skillet with the melted cheese/flour/milk mixture. Cook until heated through, then stir in remaining cup of cheese cubes and continue cooking/stirring until cheese is melted and chicken is hot and cooked to your preference.

#539 - Baked Macaroni and Beef

1lb. ground chuck
1 chopped onion
1 tsp. salt
1/2 tsp. pepper
2 - 15oz. cans Hunt's tomato sauce
1 - 8oz. box elbow macaroni
1 - 3oz. package Philly cream cheese
1 cup Breakstone's sour cream
1/2 cup grated Cracker Barrel cheddar cheese

In a skillet, brown the beef with the chopped onion, salt and pepper--cook until browned. Add tomato sauce to the browned beef and lower heat to simmer--stir and cook on low for 15 minutes, stirring so it doesn't burn. While that's cooking, cook macaroni according to box directions--drain well but don't rinse. In a bowl combine cream cheese and sour cream--stir well. Grease a large casserole dish. Layer beef, then macaroni, then sour cream. Keep layering until you are out of ingredients, then add the cheddar cheese to the top. Bake at 350 degrees for 20 minutes or until hot.

#466 - Pierogie Potato Pie

8oz. lasagna noodles
8-10 red potatoes
1/3 cup butter
1 medium onion (chopped)
1 cup shredded provolone cheese
1 cup shredded cheddar cheese
1 cup fresh breadcrumbs (cut 2 slices of bread into small pieces)
Parmesan cheese for sprinkling
2 TBSP Parkay margarine
2 tsp. salt

Peel and wash potatoes--slice them in quarters. Place in a saucepan and cover with water--add 1 tsp. salt. Bring to a boil and cook about 20 minutes or until tender. Drain water off of potatoes and mash with a potato masher, add 2 TBSP Parkay and 1 tsp. salt--mix well. Set aside. In a small pan, sautee the 1/3 cup butter with the chopped onions until onions are tender--set aside. In a small bowl, combine cheddar cheese and provolone cheese--use your hands to mix them lightly together. Cook lasagna noodles according to box directions and drain. Arrange lasagna some of the noodles on the bottom of a 3 qt. casserole dish (greased or sprayed with Pam). Spoon a light layer of buttered onions on top of lasagna noodles. Scoop a layer of mashed potatoes on top of the onions. Sprinkle a layer of cheese over the mashed potatoes. Repeat more layers of noodles, then onions, then mashed potatoes, then cheese--repeat layers until ingredients are gone. Sprinkle the entire top with Parmesan cheese. Place the bread crumbs on top of the Parmesan cheese. Cover with foil and bake at 350 degrees for 30 minutes. Remove the foil after 30 minutes and bake 10 minutes longer.
